Ingredients
  

For the Chicken:
  • 2 boneless skinless chicken breasts, cut into bite-sized pieces
  • 2 tablespoons cornstarch for a light crispy coating
  • Salt and pepper to taste
  • 1 tablespoon olive oil for cooking
For the Bang Bang Sauce:
  • ¼ cup mayonnaise
  • 1 tablespoon sriracha adjust for heat preference
  • 1 tablespoon sweet chili sauce
  • 1 teaspoon honey or maple syrup optional, for sweetness
For the Bowl:
  • 1 cup cooked white or brown rice or cauliflower rice for low-carb
  • 1 cup shredded lettuce or cabbage
  • ½ cup shredded carrots
  • ½ avocado sliced
  • Green onions and sesame seeds for garnish

Method
 

Cook the Chicken:
  1. Toss the chicken pieces with cornstarch, salt, and pepper in a bowl.
  2. Heat the olive oil in a non-stick skillet over medium-high heat.
  3. Add the chicken and cook for 8–10 minutes, turning occasionally, until golden brown and cooked through. Set aside.
Make the Bang Bang Sauce:
  1. In a small bowl, whisk together the mayonnaise, sriracha, sweet chili sauce, and honey until smooth.
Assemble the Bowls:
  1. Start with a layer of rice or your base of choice.
  2. Add shredded lettuce or cabbage, carrots, and avocado slices.
  3. Top with the cooked chicken.
  4. Drizzle the bang bang sauce generously over the bowl.
  5. Garnish with green onions and sesame seeds.
