Breakfast Taquitos are a fun, flavorful twist on the morning meal, rolling up all your favorite breakfast staples into a warm, crispy tortilla. Scrambled eggs, savory sausage, and melty cheese tuck snugly inside, then bake or fry to golden perfection. Ingredients
  

  • 6 large eggs
  • ¼ cup milk
  • Salt and pepper to taste
  • 1 cup shredded cheddar or pepper jack cheese
  • ½ cup cooked and crumbled breakfast sausage or bacon bits
  • 12 small flour or corn tortillas
  • 1 tbsp oil or melted butter for brushing
  • Optional toppings: salsa sour cream, avocado, hot sauce

Instructions
 

Prep the Filling:

  • Whisk eggs with milk, salt, and pepper in a bowl.
  • Heat a skillet over medium heat and scramble the eggs until just set.
  • Stir in the cooked sausage or bacon and sprinkle in the cheese. Remove from heat.

Assemble the Taquitos:

  • Warm tortillas slightly to make them pliable.
  • Spoon 2–3 tablespoons of the egg mixture down the center of each tortilla.
  • Roll tightly and place seam-side down on a parchment-lined baking sheet.

Bake or Air Fry:

  • Preheat the oven to 425°F (220°C) or air fryer to 375°F (190°C).
  • Brush the tops of the taquitos with oil or butter.
  • Bake for 10–12 minutes or air fry for 6–8 minutes, until crispy and golden brown.
