Ingredients
  

  • 1 cup cooked shredded chicken rotisserie works great
  • 1/4 cup Buffalo sauce adjust to taste
  • 2 tbsp ranch dressing or blue cheese dressing
  • 4 slices of thick-cut bread sourdough or Texas toast work well
  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup shredded cheddar cheese
  • 2 tbsp softened butter for the bread

Method
 

  1. In a bowl, toss the cooked chicken with Buffalo sauce and dressing until evenly coated.
  2. Butter one side of each slice of bread.
  3. On the unbuttered side of two slices, layer a bit of cheese, then the Buffalo chicken mixture, then more cheese.
  4. Top with the remaining slices of bread, buttered side out.
  5. Heat a skillet over medium heat and grill the sandwiches for 3–4 minutes per side, pressing slightly with a spatula, until golden brown and the cheese is melted.
  6. Slice in half and serve hot.
