Ingredients
  

Main Ingredients:
  • 1 ½ lbs boneless skinless chicken breasts thinly sliced
  • 1 tbsp olive oil
  • 1 tbsp butter
  • 1 large yellow onion thinly sliced
  • 1 green bell pepper thinly sliced
  • 1 red bell pepper thinly sliced
  • Salt and black pepper to taste
  • ½ tsp garlic powder
  • ½ tsp smoked paprika optional
  • 8 slices provolone or white American cheese
  • 4 hoagie rolls sliced lengthwise
Optional Add-ons:
  • Mushrooms sautéed
  • Hot banana peppers
  • Mayo or garlic aioli
  • Pickled jalapeños for heat

Method
 

Prep the Chicken:
  1. Slice chicken breasts into thin strips.
  2. Season with salt, pepper, garlic powder, and paprika. Set aside.
Sauté the Veggies:
  1. Heat olive oil and butter in a large skillet over medium heat.
  2. Add sliced onions and bell peppers. Sauté for 7–9 minutes until soft and slightly caramelized.
  3. Remove the veggies and set aside.
Cook the Chicken:
  1. In the same skillet, add the seasoned chicken.
  2. Sear for 6–8 minutes, stirring occasionally, until cooked through and golden brown.
  3. Return the veggies to the skillet and toss everything together.
Add the Cheese:
  1. Spread the chicken and veggies into an even layer in the pan.
  2. Lay the cheese slices over the top.
  3. Cover with a lid for 1–2 minutes, letting the cheese melt completely.
Toast the Rolls:
  1. While the cheese melts, toast your hoagie rolls in a separate pan or under the broiler for 1–2 minutes.
Assemble the Sandwiches:
  1. Scoop the cheesy chicken and veggies into the toasted rolls.
  2. Serve hot and gooey, with napkins ready!
