Ingredients
  

Main Ingredients:

  • 1 ½ lbs boneless skinless chicken breasts thinly sliced
  • 1 tbsp olive oil
  • 1 tbsp butter
  • 1 large yellow onion thinly sliced
  • 1 green bell pepper thinly sliced
  • 1 red bell pepper thinly sliced
  • Salt and black pepper to taste
  • ½ tsp garlic powder
  • ½ tsp smoked paprika optional
  • 8 slices provolone or white American cheese
  • 4 hoagie rolls sliced lengthwise

Optional Add-ons:

  • Mushrooms sautéed
  • Hot banana peppers
  • Mayo or garlic aioli
  • Pickled jalapeños for heat

Instructions
 

Prep the Chicken:

  • Slice chicken breasts into thin strips.
  • Season with salt, pepper, garlic powder, and paprika. Set aside.

Sauté the Veggies:

  • Heat olive oil and butter in a large skillet over medium heat.
  • Add sliced onions and bell peppers. Sauté for 7–9 minutes until soft and slightly caramelized.
  • Remove the veggies and set aside.

Cook the Chicken:

  • In the same skillet, add the seasoned chicken.
  • Sear for 6–8 minutes, stirring occasionally, until cooked through and golden brown.
  • Return the veggies to the skillet and toss everything together.

Add the Cheese:

  • Spread the chicken and veggies into an even layer in the pan.
  • Lay the cheese slices over the top.
  • Cover with a lid for 1–2 minutes, letting the cheese melt completely.

Toast the Rolls:

  • While the cheese melts, toast your hoagie rolls in a separate pan or under the broiler for 1–2 minutes.

Assemble the Sandwiches:

  • Scoop the cheesy chicken and veggies into the toasted rolls.
  • Serve hot and gooey, with napkins ready!
