  • 2 cups cooked chicken breast diced or shredded
  • 3 medium russet or Yukon gold potatoes peeled and cubed
  • 2 cups fresh broccoli florets lightly steamed or blanched
  • 1 can 10.5 oz cream of chicken soup (or homemade)
  • ½ cup sour cream or Greek yogurt
  • 1 cup shredded cheddar cheese
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • Salt and black pepper to taste
  • 2 tbsp olive oil

Optional Toppings:

  • ½ cup crushed buttery crackers or breadcrumbs
  • ¼ cup grated Parmesan cheese
  • Fresh parsley or green onions for garnish

Instructions
 

Prepare the Ingredients:

  • Preheat your oven to 375°F (190°C).
  • Toss cubed potatoes with olive oil, salt, pepper, garlic powder, and onion powder.
  • Roast them on a sheet pan for 20 minutes until just tender.

Assemble the Casserole:

  • In a large mixing bowl, combine cooked chicken, roasted potatoes, broccoli, cream of chicken soup, sour cream, and half of the shredded cheddar cheese.
  • Stir well until everything’s evenly coated and creamy.

Bake the Casserole:

  • Transfer the mixture to a greased 9x13-inch baking dish.
  • Sprinkle the remaining cheddar cheese over the top.
  • Add optional toppings like crushed crackers or Parmesan for extra crunch.
