  • 2 cups cooked chicken breast diced or shredded
  • 3 medium russet or Yukon gold potatoes peeled and cubed
  • 2 cups fresh broccoli florets lightly steamed or blanched
  • 1 can 10.5 oz cream of chicken soup (or homemade)
  • ½ cup sour cream or Greek yogurt
  • 1 cup shredded cheddar cheese
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • Salt and black pepper to taste
  • 2 tbsp olive oil
Optional Toppings:
  • ½ cup crushed buttery crackers or breadcrumbs
  • ¼ cup grated Parmesan cheese
  • Fresh parsley or green onions for garnish

Method
 

Prepare the Ingredients:
  1. Preheat your oven to 375°F (190°C).
  2. Toss cubed potatoes with olive oil, salt, pepper, garlic powder, and onion powder.
  3. Roast them on a sheet pan for 20 minutes until just tender.
Assemble the Casserole:
  1. In a large mixing bowl, combine cooked chicken, roasted potatoes, broccoli, cream of chicken soup, sour cream, and half of the shredded cheddar cheese.
  2. Stir well until everything’s evenly coated and creamy.
Bake the Casserole:
  1. Transfer the mixture to a greased 9x13-inch baking dish.
  2. Sprinkle the remaining cheddar cheese over the top.
  3. Add optional toppings like crushed crackers or Parmesan for extra crunch.
  4. Bake for 25–30 minutes, or until hot and bubbly and the cheese melts into a golden crust.
