Instructions
Cook the Eggs:
Heat butter or oil in a nonstick skillet over medium heat.
Crack two eggs into the pan and cook until the whites set but yolks remain slightly runny, about 3–4 minutes. Season with salt and pepper.
Carefully remove the eggs and set aside. Repeat with the remaining eggs.
Assemble the Quesadillas:
Lay one tortilla flat in the skillet over medium heat.
Sprinkle half of the shredded cheese evenly over the tortilla.
Place two cooked eggs over the cheese.
Add any optional fillings you like.
Top with the second tortilla.
Cook and Serve:
Cook the quesadilla until the bottom tortilla turns golden brown and the cheese starts melting, about 2–3 minutes.
Carefully flip the quesadilla using a spatula and cook the other side until golden and the cheese fully melts, about another 2–3 minutes.
Remove from heat and let it cool for a minute.
Cut into wedges and serve with salsa, avocado, or hot sauce.
