Ingredients
  

  • 4 large eggs
  • 4 small flour tortillas
  • 1 cup shredded cheese cheddar, Monterey Jack, or your favorite
  • 1 tablespoon butter or oil
  • Salt and pepper to taste
  • Optional fillings: diced tomatoes sliced avocado, cooked bacon, salsa, or hot sauce

Instructions
 

Cook the Eggs:

  • Heat butter or oil in a nonstick skillet over medium heat.
  • Crack two eggs into the pan and cook until the whites set but yolks remain slightly runny, about 3–4 minutes. Season with salt and pepper.
  • Carefully remove the eggs and set aside. Repeat with the remaining eggs.

Assemble the Quesadillas:

  • Lay one tortilla flat in the skillet over medium heat.
  • Sprinkle half of the shredded cheese evenly over the tortilla.
  • Place two cooked eggs over the cheese.
  • Add any optional fillings you like.
  • Top with the second tortilla.

Cook and Serve:

  • Cook the quesadilla until the bottom tortilla turns golden brown and the cheese starts melting, about 2–3 minutes.
  • Carefully flip the quesadilla using a spatula and cook the other side until golden and the cheese fully melts, about another 2–3 minutes.
  • Remove from heat and let it cool for a minute.
  • Cut into wedges and serve with salsa, avocado, or hot sauce.
