Cook the Eggs:
- Heat butter or oil in a nonstick skillet over medium heat.
- Crack two eggs into the pan and cook until the whites set but yolks remain slightly runny, about 3–4 minutes. Season with salt and pepper.
- Carefully remove the eggs and set aside. Repeat with the remaining eggs.
Assemble the Quesadillas:
- Lay one tortilla flat in the skillet over medium heat.
- Sprinkle half of the shredded cheese evenly over the tortilla.
- Place two cooked eggs over the cheese.
- Add any optional fillings you like.
- Top with the second tortilla.
Cook and Serve:
- Cook the quesadilla until the bottom tortilla turns golden brown and the cheese starts melting, about 2–3 minutes.
- Carefully flip the quesadilla using a spatula and cook the other side until golden and the cheese fully melts, about another 2–3 minutes.
- Remove from heat and let it cool for a minute.
- Cut into wedges and serve with salsa, avocado, or hot sauce.
