Ingredients

Core Ingredients
  • 1 ½ pounds sirloin steak cut into 1-inch cubes
  • 1 pound baby potatoes halved
  • 4 tablespoons unsalted butter
  • 4 cloves garlic minced
  • 2 tablespoons olive oil
  • Salt and black pepper to taste
  • Fresh parsley chopped (for garnish)
Optional Add-ins
  • ½ teaspoon smoked paprika for a smoky kick
  • Red pepper flakes for a touch of heat
  • Grated Parmesan cheese for serving

Equipment

  • Large skillet or cast iron pan
  • Medium pot for boiling potatoes
  • Tongs for flipping beef

Method

Prep the Potatoes:
  1. Boil halved baby potatoes in salted water for 8 minutes, until just tender. Drain and set aside.
Sear the Beef:
  1. Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Pat beef cubes dry, season generously with salt and pepper, then sear in batches for 2-3 minutes per side. Remove from skillet.
Crisp the Potatoes:
  1. Add remaining olive oil to the skillet. Toss in parboiled potatoes, cut side down, and cook for 5-6 minutes until golden.
Make the Garlic Butter Sauce:
  1. Reduce heat to medium. Push potatoes to the side, melt butter in the skillet, and add garlic. Sauté for 30 seconds until fragrant.
Bring It All Together:
  1. Return beef to the skillet, toss with potatoes and garlic butter until everything is coated.
Serve:
  1. Garnish with parsley and optional toppings, then serve immediately.

Notes

Garlic Butter Beef Bites & Potatoes – Helpful Tips
Pick the Right Cut of Beef
Use tender cuts like sirloin or ribeye for juicy bites that stay flavorful. Avoid tougher cuts unless you plan to marinate longer.
Cut Uniformly
Slice both beef and potatoes into similar-sized pieces to ensure even cooking and perfect bite-sized portions.
Sear, Don’t Steam
Cook beef over medium-high heat so it browns nicely — avoid overcrowding the pan, or it will steam instead of sear.
Garlic Butter Timing
Add garlic towards the end of cooking to prevent burning while still infusing the butter with flavor.
Par-Cook the Potatoes
Microwave or boil potatoes briefly before pan-roasting to speed up cooking and achieve a crisp exterior.
Season Generously
Don’t be shy with salt, pepper, and herbs — they enhance both the potatoes and beef equally.
Serve Hot
This dish is best enjoyed immediately, while the garlic butter is glossy and the potatoes are crisp.
Add Optional Boosters
Top with chopped parsley, a squeeze of lemon, or a sprinkle of Parmesan for extra flavor.
Meal Prep-Friendly
Store leftovers in an airtight container in the fridge up to 3 days. Reheat gently in a skillet or oven to maintain crispiness.
