Ingredients
  

  • 4 bone-in skin-on chicken thighs
  • 1.5 lbs baby potatoes halved or quartered
  • 4 cloves garlic minced
  • ½ cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 1 teaspoon dried Italian seasoning or mixed herbs
  • Salt and pepper to taste
  • Fresh parsley chopped (for garnish)

Method
 

Prepare the Chicken and Potatoes:
  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, toss the potatoes with half the olive oil, half the minced garlic, salt, pepper, and half the Parmesan cheese. Set aside.
  3. Pat the chicken thighs dry with paper towels. Rub them with the remaining olive oil, garlic, salt, pepper, Italian seasoning, and Parmesan cheese.
Roast Everything Together:
  1. Arrange the chicken thighs skin-side up on a large baking sheet or ovenproof pan.
  2. Scatter the potatoes around the chicken in a single layer.
  3. Roast for 35 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the potatoes are golden and crispy.
Serve:
  1. Garnish with fresh parsley before serving.
  2. Plate the chicken and potatoes together with your favorite steamed vegetables or a fresh salad.
