Ingredients
  

  • 1 lb ground beef
  • 4 cups potatoes peeled and thinly sliced
  • 1 medium onion chopped
  • 1 green bell pepper chopped
  • 2 cloves garlic minced
  • 1 can 10.5 oz condensed cream of mushroom soup
  • 1 cup shredded cheddar cheese
  • Salt and pepper to taste
  • 1 tsp paprika
  • 1 tbsp olive oil

Instructions
 

Prepare the Ingredients:

  • Preheat your oven to 375°F (190°C).
  • Heat olive oil in a skillet over medium heat.
  • Add chopped onion, bell pepper, and garlic; sauté until softened, about 5 minutes.
  • Add ground beef to the skillet. Cook until browned, breaking it apart with a spatula. Season with salt, pepper, and paprika.

Assemble the Casserole:

  • In a greased 9x13-inch baking dish, layer half the sliced potatoes in an even layer.
  • Spread half the cooked beef and vegetable mixture over the potatoes.
  • Spoon half of the cream of mushroom soup over the beef layer.
  • Repeat the layers with the remaining potatoes, beef mixture, and soup.

Bake and Finish:

  • Cover the casserole tightly with foil and bake for 35 minutes.
  • Remove the foil, sprinkle shredded cheddar cheese evenly over the top.
  • Bake uncovered for an additional 10 minutes until cheese melts and bubbles.
