Ingredients
  

  • 1 bag frozen French fries about 20 oz
  • 1/2 lb smoked andouille sausage sliced
  • 1 cup shredded cheddar cheese
  • 1/4 cup pickled jalapeños optional
  • 1/4 cup green onions chopped
  • Cajun seasoning to taste

For the Voodoo Sauce:

  • 1/2 cup mayonnaise
  • 2 tbsp ketchup
  • 1 tbsp Dijon mustard
  • 2 tsp hot sauce like Crystal or Tabasco
  • 1 tsp Cajun seasoning
  • 1 clove garlic minced

Instructions
 

  • Preheat your oven according to the French fries package instructions. Bake until crispy and golden.
  • While the fries are baking, brown the sliced andouille sausage in a skillet over medium heat, about 5–6 minutes.
  • In a small bowl, whisk together all the voodoo sauce ingredients until smooth. Taste and adjust heat with extra hot sauce if desired.
  • Once fries are done, spread them on a large oven-safe tray or cast iron skillet. Sprinkle with shredded cheddar cheese.
  • Return to the oven for 3–5 minutes, just until the cheese is melted.
  • Top with browned sausage, drizzle with voodoo sauce, then garnish with jalapeños and green onions.
  • Finish with a generous shake of Cajun seasoning and serve immediately.
