Ingredients
  

  • 6 flour tortillas 8-inch size
  • 6 sausage links or patties cooked and crumbled
  • 6 large eggs
  • ¾ cup shredded cheddar cheese
  • 1 tablespoon butter or oil
  • Salt and pepper to taste
  • Optional: salsa hot sauce, or chopped green onions

Method
 

Cook the Sausage:
  1. Brown sausage in a skillet over medium heat until fully cooked and crispy.
  2. Remove and set aside on a paper towel-lined plate.
Scramble the Eggs:
  1. Crack the eggs into a bowl, season with salt and pepper, and whisk until blended.
  2. In the same skillet, melt butter or add a splash of oil over medium heat.
  3. Pour in the eggs and scramble until just set—light and fluffy.
Assemble the Roll-Ups:
  1. Warm tortillas slightly in the microwave or a dry skillet to make them more pliable.
  2. Place a scoop of scrambled eggs along the center of each tortilla.
  3. Sprinkle crumbled sausage over the eggs.
  4. Top with shredded cheese and any optional add-ins like salsa or green onions.
  5. Roll each tortilla tightly, tucking in the sides to form a neat roll-up.
Toast the Roll-Ups (Optional but Delicious):
  1. Place the roll-ups seam-side down in a clean skillet.
  2. Toast for 1–2 minutes per side until golden and crispy.
  3. Remove from heat and let cool slightly before serving.
