Ingredients
  

  • 8 slices soft sandwich bread white or wheat
  • 8 fully cooked breakfast sausage links
  • 2 large eggs
  • ¼ cup milk
  • 1 tsp vanilla extract optional
  • 1 tsp cinnamon plus more for sugar coating
  • 2 tbsp sugar
  • Pinch of salt
  • 2 tbsp butter for frying
  • Optional: maple syrup powdered sugar, fruit for topping

Method
 

Assemble the Roll-Ups:
  1. Use a rolling pin to flatten each bread slice.
  2. Place one cooked sausage link near the edge of the bread and roll it up tightly.
  3. Press the seam gently to seal. Repeat with remaining slices.
Make the Custard:
  1. Whisk eggs, milk, vanilla, cinnamon, and salt in a shallow dish.
Dip and Fry:
  1. Heat butter in a nonstick skillet over medium heat.
  2. Dip each roll-up into the egg mixture, coating all sides.
  3. Place roll-ups seam side down in the skillet and cook until golden brown, turning to brown all sides—about 6–8 minutes total.
Coat or Top:
  1. Mix sugar and cinnamon on a plate. Roll warm roll-ups in the mixture.
  2. Or, skip the coating and drizzle maple syrup on top instead.
  3. Serve hot with extra syrup or fruit if desired.
