Ingredients
  

  • 8 slices soft sandwich bread white or wheat
  • 8 fully cooked breakfast sausage links
  • 2 large eggs
  • ¼ cup milk
  • 1 tsp vanilla extract optional
  • 1 tsp cinnamon plus more for sugar coating
  • 2 tbsp sugar
  • Pinch of salt
  • 2 tbsp butter for frying
  • Optional: maple syrup powdered sugar, fruit for topping

Instructions
 

Assemble the Roll-Ups:

  • Use a rolling pin to flatten each bread slice.
  • Place one cooked sausage link near the edge of the bread and roll it up tightly.
  • Press the seam gently to seal. Repeat with remaining slices.

Make the Custard:

  • Whisk eggs, milk, vanilla, cinnamon, and salt in a shallow dish.

Dip and Fry:

  • Heat butter in a nonstick skillet over medium heat.
  • Dip each roll-up into the egg mixture, coating all sides.
  • Place roll-ups seam side down in the skillet and cook until golden brown, turning to brown all sides—about 6–8 minutes total.

Coat or Top:

  • Mix sugar and cinnamon on a plate. Roll warm roll-ups in the mixture.
  • Or, skip the coating and drizzle maple syrup on top instead.
  • Serve hot with extra syrup or fruit if desired.
