Prep the Chicken:
- Toss chicken pieces with cornstarch, garlic powder, salt, and pepper.
- Coat evenly to ensure a crispy golden sear when cooked.
Cook the Chicken:
- Heat oil in a large skillet over medium-high heat.
- Add chicken in a single layer—don’t overcrowd the pan.
- Sear for 4–5 minutes, then flip and cook until chicken is golden and cooked through, about 8–10 minutes total.
- Remove from skillet and set aside.
Make the Sweet Chili Sauce:
- In the same skillet, reduce heat to medium.
- Add minced garlic and ginger, cooking until fragrant (about 30 seconds).
- Pour in sweet chili sauce, soy sauce, vinegar or lime juice, and sriracha if using.
- Stir and simmer for 1–2 minutes until the sauce thickens slightly.
Combine and Coat:
- Return cooked chicken to the skillet.
- Toss to coat every piece in the sticky, glossy sauce.
- Cook for another minute, just until everything is heated through.
