Taco Lasagna is a delicious fusion that takes the bold, zesty flavors of a classic taco and layers them into a comforting, cheesy lasagna. Ingredients
  

For the Meat Layer:

  • 1 lb ground beef
  • 1 small onion diced
  • 2 cloves garlic minced
  • 1 packet taco seasoning or 2 tbsp homemade taco seasoning
  • ½ cup water

For the Layers:

  • 8 –10 small flour tortillas 6-inch size
  • 2 cups shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1 can 15 oz refried beans
  • 1 cup salsa mild or spicy, your choice
  • ½ cup sliced black olives optional
  • ½ cup chopped green onions optional

Optional Toppings:

  • Sour cream
  • Fresh cilantro
  • Diced tomatoes
  • Avocado slices
  • Jalapeño slices

Instructions
 

Cook the Meat:

  • Heat a large skillet over medium heat. Add ground beef and diced onion.
  • Cook, breaking up the meat until browned and onions are soft.
  • Add garlic and taco seasoning, stirring well.
  • Pour in water and simmer until thickened, about 5 minutes. Remove from heat.

Assemble the Taco Lasagna:

  • Preheat your oven to 375°F (190°C).
  • Spread a thin layer of refried beans on the bottom of a 9x13-inch baking dish.
  • Layer 2–3 tortillas over the beans, overlapping as needed.
  • Spread half the cooked taco meat over the tortillas.
  • Dollop half the salsa over the meat, then sprinkle with a mix of cheddar and Monterey Jack cheeses.
  • Repeat layers: tortillas, remaining meat, salsa, and cheese.
  • Finish with a final layer of tortillas topped with remaining cheese, black olives, and green onions if using.

Bake and Serve:

  • Cover the dish with foil and bake for 15 minutes.
  • Remove foil and bake another 10 minutes until cheese bubbles and browns slightly.
  • Let the lasagna rest for 5–10 minutes before slicing.
