Cook the Meat:
- Heat a large skillet over medium heat. Add ground beef and diced onion.
- Cook, breaking up the meat until browned and onions are soft.
- Add garlic and taco seasoning, stirring well.
- Pour in water and simmer until thickened, about 5 minutes. Remove from heat.
Assemble the Taco Lasagna:
- Preheat your oven to 375°F (190°C).
- Spread a thin layer of refried beans on the bottom of a 9x13-inch baking dish.
- Layer 2–3 tortillas over the beans, overlapping as needed.
- Spread half the cooked taco meat over the tortillas.
- Dollop half the salsa over the meat, then sprinkle with a mix of cheddar and Monterey Jack cheeses.
- Repeat layers: tortillas, remaining meat, salsa, and cheese.
- Finish with a final layer of tortillas topped with remaining cheese, black olives, and green onions if using.
Bake and Serve:
- Cover the dish with foil and bake for 15 minutes.
- Remove foil and bake another 10 minutes until cheese bubbles and browns slightly.
- Let the lasagna rest for 5–10 minutes before slicing.
