Ingredients
  

For the Meat Layer:
  • 1 lb ground beef
  • 1 small onion diced
  • 2 cloves garlic minced
  • 1 packet taco seasoning or 2 tbsp homemade taco seasoning
  • ½ cup water
For the Layers:
  • 8 –10 small flour tortillas 6-inch size
  • 2 cups shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1 can 15 oz refried beans
  • 1 cup salsa mild or spicy, your choice
  • ½ cup sliced black olives optional
  • ½ cup chopped green onions optional
Optional Toppings:
  • Sour cream
  • Fresh cilantro
  • Diced tomatoes
  • Avocado slices
  • Jalapeño slices

Method
 

Cook the Meat:
  1. Heat a large skillet over medium heat. Add ground beef and diced onion.
  2. Cook, breaking up the meat until browned and onions are soft.
  3. Add garlic and taco seasoning, stirring well.
  4. Pour in water and simmer until thickened, about 5 minutes. Remove from heat.
Assemble the Taco Lasagna:
  1. Preheat your oven to 375°F (190°C).
  2. Spread a thin layer of refried beans on the bottom of a 9x13-inch baking dish.
  3. Layer 2–3 tortillas over the beans, overlapping as needed.
  4. Spread half the cooked taco meat over the tortillas.
  5. Dollop half the salsa over the meat, then sprinkle with a mix of cheddar and Monterey Jack cheeses.
  6. Repeat layers: tortillas, remaining meat, salsa, and cheese.
  7. Finish with a final layer of tortillas topped with remaining cheese, black olives, and green onions if using.
Bake and Serve:
  1. Cover the dish with foil and bake for 15 minutes.
  2. Remove foil and bake another 10 minutes until cheese bubbles and browns slightly.
  3. Let the lasagna rest for 5–10 minutes before slicing.
